What is Bulk Purchasing?
Bulk purchasing offers our customers the lowest price for meat. This is purchasing meat in quarters, halves and wholes, which saves time sorting and processing and you get a large assortment of cuts.
How do I store my beef?
Beef will store very well in the freezer for a year or more. The space required to store the meat will take approximately 1 cubic foot for every 35lbs. of meat. A split half will require about 2.5 cu. Ft. A Half about 5.5-6 cu. Ft. and a Whole about 11-12 cu. Ft. of freezer space.
What is dry aging?
Lazy C Beef carcasses are dry aged for 12-14 days. Unlike supermarket meat of 2-5 days. Dry aging is the concentration and saturation of the natural beef flavor. This process changes the beef in two ways: First, moisture is evaporated from the muscle. This creates a greater concentration of flavor and taste. Second, the beefs enzymes break down the connective tissues in the muscle, which makes for more tender meat.
How do I transport my beef?
The meat is delivered frozen and will stay frozen (even on the hottest day) for transporting if put in coolers for the delivery home.
How will my beef look?
The beef is frozen and double wrapped. The meat may look dark colored when removed from the wrapping while frozen but as it thaws it will return to the red color that meat should look like.
